Tawa Vegetable

Been wanting to make this for a long time, but was continuously turned off by the fact that everyone keep frying the vegetables before adding all the masalas to it. After searching a bit I found a link where you didn’t have to fry the veggies at all without any compromise in the taste. As per me anyway :). I didn’t have any lady’s finger, brinjals OR karela so just used the veggies that I did have instead. The only key here really is to NOT cook the veggies too much at all, just cook them enough so they are not completely raw. If you don’t it’ll just become like a normal curry or dry vegetable recipe, which is not what you want here. Tawa vegetables is all about the veggies remaining a bit raw so you get a crunchy sound when you bite into them.

The veggies I used were potatoes, onions, tomatoes, cauliflower, broccoli, beans, bell peppers and green peas. Tasted fantastic 🙂
