Baby corn Masala

This one’s a very simple recipe.

a) Boil corn for a small amount of time in an open vessel. Don’t pressure cook it – corn is already very soft and eatable as it is.

b) Chop onions and tomatoes into small pieces. Fry the onions with some mustard, cumin, salt, turmeric, chilly powder, garlic powder and ginger.

c) Puree the tomato in a mixer and add it to the fried onions once the onions start turning brown.

d) Mix well. Add the baby corn and stir and cook till you get the consistency you want. Add a little yoghurt or milk along with some lemon juice and garam masala right at the end to give it a flavor.

Eat with rotis or rice :). If you want you can make this dry, by not pureeing the tomatoes but frying it with the onion instead.
