Malai Kofta

So Dinesh said he loved it and as we didn’t have anything else useful to do on Thanksgiving .. I decided to give it a shot. It came out reasonably well to be frank, only Dinesh said it didn’t particularly taste like Malai Kofta :D. All the same it was inspired largely by this recipe here – http://www.padhuskitchen.com/2013/03/malai-kofta-recipe-how-to-make-malai.html

In summary here’s what we did:

– Used Potatoes, Carrots, Beans and Sweet Corn as the base vegetable (for the Kofta).

– Ground the Onions, Tomatoes and dry masalas to a paste before frying it with a little cumin seeds.

– We used mild Cheddar cheese instead of paneer as that’s all we had.

– We used yoghurt instead of cream as we didn’t have it.

– Dinesh added some sugar in the end giving the gravy a unique sour, sweet taste and the Kofta’s being a little spicy, it made for a nice combination.

– We roasted the Koftas instead of deep frying them, thus consuming lesser oil. The flip side of this is that the sides don’t get roasted as well as we would like.
